The owners of Mamie Clafoutis wanted to transform the space and operation of their bakery on Saint-Denis Street, in the Plateau-Mont-Royal. The mandate: refresh the layout, double the area open to the public, and reserve the kitchen and mezzanine for staff. Beyond spatial constraints, a significant challenge: changing customer habits by introducing an artificial intelligence system making the shop fully autonomous. Accustomed to counter service, customers had to embrace this new technological model without losing the warm atmosphere of a Parisian bakery, essential to Mamie Clafoutis' identity. The goal: to offer a smooth and intuitive experience through a simple and accessible application. The layout needed to incorporate surveillance, security, smooth circulation, and an enveloping atmosphere. Each element contributed to turning the visit into a discovery journey while ensuring customer autonomy. From the outside, the open storefront creates a visual breakthrough to the interior. Architectural arches enhance this depth and naturally invite passersby to enter. A double vestibule manages entry and exit in connection with the app, facilitating flow control. This new visual identity balances the bakery's traditional values with an innovative approach. Symbolic references enrich the layout: curved tiled walls evoking the Paris metro, blond wood recalling the craftsmanship of bread, black and white mosaic inspired by bistros and old bakeries, and burgundy as a nod to Mamie's sweet universe. Used sparingly, these shades create a warm, harmonious, and welcoming environment. The wooden framework of the suspended ceiling, oriented at 45 degrees, structures the space and sets the rhythm of the height perception. It extends into the organization of shelves, tablets, and hanging supports. This weaving, on a crushed raspberry background, almost evokes a pie hanging above our heads. Both aesthetic and functional, the frame also integrates lighting and surveillance cameras. The interior layout promotes intuitive circulation. Central islands serve as displays and punctuate the path, while a large central island houses two self-service coffee spaces. At the back of the store, a curtain wall clearly delineates the cold zone where refrigerators and freezers are grouped. The use of varied displays - shelves, islands, stop stations - highlights the diversity of products and naturally guides the customer. A flexible island allows switching from an autonomous model to personalized service. Employees, mobile in the space, assist customers as needed, help them use the app, or answer their questions. This approach reimagines the bakery experience, reconciling innovation, refined design, and human hospitality.
