This singularly innovative project unfolded in the centre of Old Quebec City, in a space on Saint-Pierre Street formerly occupied by catering company Les Voûtes du Cavour. The goal was to offer guests a fully immersive dining experience, from the architecture to the decor to the food on their plate. From the moment they step through the door, diners are cut off from the outside world; as the meal progresses, they are taken on a sensory journey through four cellars, each with its own distinctive feel. Our job was to create the perfect venue for a restaurant as impressive as its storied setting. In creating the concept for the project, authenticity and innovation were our watchwords, while never losing sight of the need to honour and respect the original architecture.
This remarkable experience is a delight for the senses—a journey not only through a physical space but also through time, inspired always by the marvels of history, art, and architecture.
