Delta Lévis Centre des congrès, a complex comprising a 150-room and suite hotel as well as a 22-room multifunctional convention center, wanted to renew its food and beverage offering by redeveloping a vast space occupied by a restaurant that closed in 2020 to create a brand-new « brasserie québécoise »-style food and beverage offering, characterized by dishes cooked with accessible local products and offered in an immersive, unpretentious environment.
The Quebec brasserie concept inspires us to create a welcoming environment that clearly expresses pride in offering the best of local cuisine. The restaurant will naturally become a gathering place where you’ll feel right at home. Our design, current but above all hushed and inviting, is conceived so that everyone feels perfectly at home.
The name of this new establishment represents Quebecois simplicity, in the best sense of the word. Its personality must be both light and reassuring, a familiar presence in a foreign city. It will be called Les Moineaux.
The concept is embodied first in its palette of warm colors in a thousand shades, from the most neutral of beiges to the most vibrant of orange-browns. Then in its materials, a blend of the rich textures of copper, leather and concrete, subtle plays of light through perforated partitions and suspended elements dressing the ceilings with lightness.
The sparrows have made their nest in a woodland stripped of its summer colors to make way for a cameo of browns, ochres and earthy hues. Surrounded by wood, straw and fallen leaves, they welcome you to their warm and inviting refuge. When the cold sets in, Quebecers get together and celebrate!
The sumptuous central bar, highlighted on the floor by a ceramic treatment in a concentric pattern and on the ceiling by an impressive light sculpture, serves as the anchor point for the layout of a section perfect for 5 à 7.
Vibrant by day and atmospheric by night, the dining room is dressed in eclectic, imperfect and surprising materials linked by an autumnal color palette that ensures a cohesive design.
The ceilings are dressed in natural materials such as cannage, a trendy weave used here in such an unusual way that it will transcend the boundaries of interior design.
At the far end, we encounter, in order, a raw bar, a second bar and a lounge area whose layout is punctuated by voluminous turned-wood columns, XXL lighting fixtures overlooked by a volatile silhouette spreading its protective, enveloping wings.
