Located in the heart of Old Québec, Hôtel Manoir Victoria blends historic charm with modern comfort. Since the 1830s, this iconic establishment has continually evolved with the times. Its current location on Côte du Palais holds a rich and fascinating history — as early as the late 19th century, it featured a swimming pool and Turkish baths, an avant-garde luxury for its era.

Since 2012, Hôtel Manoir Victoria has also been home to a must-visit gastronomic destination: Chez Boulay – bistro boréal, founded by chefs Jean-Luc Boulay and Arnaud Marchand. The cuisine is seasonal, inventive, and deeply rooted in Québec’s terroir.
In a refined and elegant setting designed by LemayMichaud, the dishes showcase Nordic ingredients: haskap berries, sea buckthorn, game, freshwater fish, wild mushrooms… All served with finesse, in a warm and welcoming atmosphere.
The restaurant was recently recommended in the first regional edition of the Michelin Guide, a distinction that confirms its excellence.
LE BEDEAU
An unpretentious resto-bar with design inspired… by a church!
Opened in 2022 by chef Arnaud Marchand’s team, Le Bedeau offers a relaxed atmosphere where wine takes center stage—without the pretension. Its mission: to make wine approachable, playful, and joyful.
Once again, LemayMichaud signs the design of this unique space, inspired by a collection of church furnishings personally sourced by the chef. Sculpted pew-style banquettes, warm lighting, and nods to religious heritage create an inviting, bold, and friendly ambiance.
Thanks to a new investment, hotel guests will soon be able to access Le Bedeau directly from the lobby—an irresistible gourmet invitation for your next stay in Québec City.
