Annette, an elegant name for a refined wine bar, reflects the owner Mila’s Ukrainian roots and the country’s traditional dill-infused (aneth in French) dishes. We wanted this project to be a balance of strength and delicacy as a tribute to Annette’s femininity. The result was a visual and architectural signature with a botanical, slightly retro feel.
The experienced restaurateurs wanted to create a destination where you could lose track of time and discover a wine, dish or artistic performance. When you enter, you’re welcomed by a standing bar amid a hundred-seat space, lushly enveloped in various shades of green: jade-veined marble complements deep olive walls and soft green felt benches accent forest green corrugated iron. The abundant foliage echoes the fresh herbs used in the bar’s cocktails.
The bar counter runs the length of the space, fluidly connecting to the kitchen. Textured glass boxes hang overhead, creating an ambient play of light and shadow, and custom-made furniture adds charm and comfort to a variety of seating arrangements. In the centre of it all, diners can watch chef Marc-André Jetté and his team prepare delicate dishes in the open kitchen. At the back, an eye-catching and sumptuous cellar reminds guests of the extensive wine list.
As it was designed as a performance venue, all the furniture can be easily reconfigured to afford a clear view of the stage at the front, and the acoustics are impeccable for both bar and show mode. And since it’s a wine bar, large glass doors can section off a private tasting room for up to 50 people.
