So, driven by a desire to design a physical space in keeping with their vision of an innovative and eccentric business, they visited many countries to study the best examples of distilleries. Particularly marked by their trip to Scotland and Japan, the co-founders approached the project with a singular ambition and a desire to design a distillery project that could set a precedent in Quebec from a programmatic, regulatory and architectural point of view.

.

Located on an unzoned lot belonging to the local municipality, the project design was initiated in concert with the city, the aim being for the project standards to dictate the drafting of the PIIA. Although the lot is in fact a vast wasteland along Pointe-au-Père Avenue, each site parameter was rigorously studied to ensure that the project would offer a positive, long-lasting legacy to the environment: ground materials, clearance between the road and the building, amount of vegetation, materiality of pavements, building height, terrace areas, parking spaces, traffic lanes – no parameter was left to chance. This design process of successive iterative loops with municipal authorities is far from the norm in professional practice: regulations generally arrive well before the design stage. This peculiarity highlighted the importance of healthy collaboration between all the bodies involved, and the added value that each of them can have on the final quality of the project and the spin-offs on a territorial scale.

.

The proactivity and ingenuity of all parties involved proved essential to this project: the architectural brief for the St.Laurent distillery was bold and demanding, combining stringent industrial imperatives with high standards of recreational-tourism experience – warehouses, ageing cellar, distillation spaces, bottling area, mechanical rooms, offices, flavour library, rest areas for employees, bar, terraces, boutique, reception area and so on. Because of the complexity of the uses and the particularly different requirements they imposed, detailed programmatic and regulatory studies were carried out before starting the design, in order to obtain a coherent result and a qualitative experience for all without compromising safety, comfort and compliance. In parallel, studies of the vernacular and regional typologies already making up the Bas-St-Laurent landscape were carried out, as the team was keen to innovate while demonstrating a deep respect for building traditions and geographical particularities.

Sheet metal, wood, stone – all the materials used in the project display their natural colors in a sober, unadorned manner. It’s the assemblies and architectonics that create the rhythm and modulation on the facades, managing to reconcile the industrial scale with that of pedestrian strolling. Conceived as an architectural promenade, the sequence of interior and exterior spaces gives visitors an understanding of the entire spirits production process, and highlights the know-how of the employees. In order to modulate this architectural promenade and structure the site without compromising its natural character, the concept was developed using long mineral slats sliding into the horizontality of the river landscape. Made from gabion walls, the slats invite visitors to wander freely between them, discovering various gardens and views. The buildings, for their part, take advantage of these blades to establish themselves between them, evoking various cultural heritage volumetrics widely found in this region, characterized by its agriculture and relationship to the river, such as barns and smokehouses.

The use of gabions to materialize these mineral blades is, of course, far from trivial. This example illustrates that the excellence of this project is expressed simultaneously in several aspects. Firstly, the stones are sourced from a disused sand pit in the region, giving them a particularly low ecological footprint as well as being an economical choice for the customer. Secondly, this design decision met a programmatic and functional need: that of having an aging cellar for whisky barrels, enabling them to be exposed for several successive years to the fluctuating temperatures and salty air of the River, while still being in a safe space protected from the elements. The gabion walls act as an outer envelope for the integrated ageing cellar, between two slats that allow river air to circulate around the barrels without the risk of damage or unchecked access. In addition, these walls actively contribute to the quality of the recreational-tourist experience, allowing constellations of small points of light to filter through between the stones, producing a singular, almost ethereal atmosphere inside the winery. Finally, another advantage of this gabion wall strategy is the possibility of inexpensively reproducing, without compromising the quality of the whole, other mineral blades at the bottom of the site to add additional warehouses and ageing cellars during the growth phases of the distillery’s production.

.

Many other design decisions testify to the exemplarity of this project in finding solutions that simultaneously address issues of ecology, sustainability, regulation, program, functionality and experience. The double height of the production space, required to accommodate the distillation equipment, is used to accommodate a walkway overhanging the stills, allowing visitors to appreciate all the work involved in producing spirits without disturbing the employees or compromising safety imperatives; the management of the separation between production and recreational/tourist uses is managed by a passageway between two buildings, which maintains a harmonious horizontal roof line while also serving as a vestibule and main covered entrance; the heat generated by the production area and equipment is reused to heat the bulk storage area, which must be tempered, etc.

The structural concept developed for the main distillery building is also a happy amalgam of an ambition for innovation, the desire to respect the region’s building traditions, and the need to make sustainable choices. The resulting solution is both atypical and innovative. It consists of an exoskeleton of glued-laminated timber columns and trusses of the same materiality, echoing the vernacular structures of the region’s buildings, yet with a resolutely contemporary signature. The large windows made possible by this structural and constructive strategy serve simultaneously to frame the immense beauty of the landscape as well as to serve as a showcase, where key moments of the interior spaces are offered to the eyes of the people occupying the exterior spaces. Generously bathed in natural light, the spaces dedicated to employees and visitors alike benefit from undeniable spatial qualities and demonstrate the added value of sensitive architectural spaces designed with comfort and health in mind. Large openings also allow air to circulate without overheating – the building is also oriented to take advantage of prevailing winds for its natural ventilation, while the location of its inner courtyard serves to create a microcosm protecting visitors from the same winds.

.

Despite the simple principles and sober materials used uniformly, it’s astonishing to note the spatial diversity of the spaces offered by the distillery, which play with double heights, exposed framework, alternating solids and voids, views of different fragments of the Pointe-au-Père landscape from the ground or second floor, and so on. All in all, this is a convincing example of the harmonious integration of an ambitious industrial and recreational program in a high-quality landscape, where each component contributes to the enhancement of the others in a measured and sensitive manner. A booming industry, distilleries are relatively new typologies in the province.
